The Anchovy (Genus: Engraulis) is a small schooling fish found in coastal waters of the Atlantic, Pacific, and Indian Oceans. They are known for their silver stripe along each side and their sharp, somewhat pungent taste. Anchovies are planktivores, feeding mainly on zooplankton and small fish. They are highly sought after in both culinary applications and as bait for larger fish species. Several species of anchovies exist, with the most well-known being the European anchovy (Engraulis encrasicolus) and the Californian anchovy (Engraulis mordax).
